“Technological innovation in the oil mill for high quality oil” is the title of the meeting that we at Olive News we organize on the inaugural day of theEnoliExpo of Bari (7-9 March 2024), the only fair in Italy dedicated to the olive oil sector and the main one in the centre-south for the viticulture and wine sector.

The appointment is scheduled at 13.30pm on Thursday 7 March, in the San Michele room of the exhibition center which hosts this international fair with free entry where over 200 exhibitors will be present, with over thirty training and professional development events.

Choosing the theme of the meeting Olive News was born from the awareness that in recent years the extra virgin olive oil extraction process has undergone a strong push towards innovation also influenced by the evolution of the very concept of product quality.

This topic will be addressed by Maurice Servili (in the picture), professor of food science and technology at the University of Perugia, one of the most authoritative experts on the subject who will illustrate which phases of the mechanical oil extraction process are fundamental both for obtaining high quality products and for guaranteeing greater yield to extraction. A particular focus will be dedicated to the pressing phase, a fundamental moment in the extraction process, as it is responsible for the production of the aromas of the oil, through the enzymatic activity of the lipoxygenase and the concentration of the polyphenols thanks to which the extra virgin olive oil is recognized as the only food product that can boast four distinct health claims.

The conference will subsequently host the speech bySofia Luchetti, Product specialist in the olive oil and food & beverage sector of Pieralisi Maip, a leading company in the production of oil machines, who will illustrate the new plant focused on the production of a Premium oil while maintaining a high extraction yield.
