A new, special dish, in which ingredients of daily preparation in the kitchen are combined, such as chicken breast, peppers, peaches, almonds, lavender. The result is a very digestible cut of white meat, whose character is supported by a sauce of flavour, the crunchiness of the almond and the aromas of lavender, an inviting whole with a pleasant presence on the diners' table. In all, obviously flavored with an abundant accompaniment on several occasions of medium fruity extra virgin olive oil, the determining element in giving the preparation its decisive and harmonious taste.

INGREDIENTS
For the chicken breast marinade
- 500 g of chicken breast
- 1 clove of garlic
- juice and zest of 1 lemon
- 5/6 sprigs of lavender (inflorescences and leaves)
- 100 ml of white wine
- Monovarietal extra virgin olive oil Moraiolo – medium fruity
- salt
- pepper
For the flavored pepper and peach sauce
- 1 red pepper
- 1 ripe yellow peach
- 2/3 sprigs of lavender (only inflorescences)
- Monovarietal extra virgin olive oil Moraiolo – medium fruity
- salt
For cooking chicken breast
- The filtered liquid from the marinade
- Monovarietal extra virgin olive oil Moraiolo – medium fruity
- almond flakes
- salt
- pepper
To decorate the plate
- Almond slices and lavender flowers
- Monovarietal Moraiolo extra virgin olive oil – medium fruity
PREPARATION
For the chicken breast marinade
Place the chicken breast in a glass bowl with the garlic, juice and zest of 1 lemon, the sprigs of lavender (inflorescences and leaves), the white wine, the Moraiolo extra virgin olive oil, salt and pepper. Cover with plastic wrap and leave to marinate for 30 minutes, turning it occasionally.
For the flavored pepper and peach sauce
In a large glass, blend the red pepper, the ripe yellow peach, the inflorescences of 2/3 sprigs of lavender and a pinch of salt with a blender. Emulsify well by slowly adding the Moraiolo extra virgin olive oil.
For cooking chicken breast
Place the chicken breast in a non-stick pan with the filtered marinade liquid, add the Moraiolo extra virgin olive oil and a handful of almond flakes. Cook 7-8 minutes per side, it must be well cooked! Season with salt and pepper. Once ready, place the chicken breast on a cutting board and cut into the characteristic strips of the cut.
Composition of the dish
Spread the lavender flavored pepper and peach sauce on a serving plate. Arrange the slices of chicken cut. Decorate with more almond slices and lavender flowers
