The training school EVOlution Academy by AIRO (International Association of Oil Restaurants) proposes the fourth edition of Course for Oil Mill Technician. The course is open to all those who want to deepen their knowledge and production techniques of extra virgin olive oil. In particular, it is aimed at producers, oil mill operators, agronomists and land surveyors, with the aim of training a professional figure that is increasingly in demand.
The course is structured in theoretical and practical lessons in order to provide a complete overview of the various aspects of managing an oil mill: crusher mechanics; management of cultivars and their expression in the different types of oil; the SIAN registry; valorisation of by-products and regulations for trade. In addition, the fundamentals of the will be covered tasting technique transmitted through the tasting of virgin and extra virgin olive oils.
During the course, pressing tests are carried out specifically for the students, who will be able to interact directly with the experts during the different phases of the production process, as well as evaluate in real time the effect of the variation of some parameters on the oil obtained. Guided visits to the latest generation of oil mills are also planned.
