La production of high quality oil has extremely evolved in terms of technological innovation in the last decades. Quality requires an early harvest which is associated with olive temperatures that are too high to obtain a quality product, due to global warming. This has meant that the tendency in the oil mill is no longer to heat, but rather the opposite: cool to contain increasingly higher olive temperatures.
Cold technology
La cold technology in the oil mill it must be evaluated carefully because the commercial proposals are numerous, but often not really functional. The refrigeration of the olive fruit, for example through water from the washing machine, is not as functional as it would seem. This is because the olive skin is highly insulating, therefore the temperature of the pulp is not effectively reduced. The secret lies in refrigerating the olive paste.
Refrigeration is required in the mill in the very early stages of the process and in particular during the pressing as – as already reported in one specific article – it is the heart of the production of aromas and significantly affects the other organoleptic characteristics that define a high quality oil, including phenolic compounds.

During the Enoliexpo international fair in Bari he took the opportunity (in the picture) for present a new plant for the production of high quality oils updated with the latest technologies: My Mill 8.2.

Il MyMill 8.2 is a complete system from the reception and washing phase to the clarification of the oil and is designed for small productions. The crusher it is characterized by a refrigeration system for 100% of the contact surfaces, a patented grille and impeller and an inverter for regulating the rotation of the striking elements. All components are designed ad hoc and guaranteed by an originality that stands out in the market. La kneading technology it has completely changed the design with total inspectionability, cleanliness and guarantees a confined environment compared to the outside, reducing oxidative phenomena. The decanter is equipped with a second back-drive motor for operational flexibility depending on the characteristics of the raw material which change during the harvesting campaign in order to maximize extraction performance and optimize energy consumption. Finally, the separation phase carries out a clarification and stabilization action on the oil, reducing solid impurities, mucilage and residual vegetation water by up to ten times. The extracted oil is more stable to oxidation and to sludge and rancid defects.
