A sensory journey between taste, health and territorial identity, with the creations of the chef Umberto Vezzoli and the combinations chosen by panel leader Alfredo Marasciulo.
On Tuesday, May 27, at 19:30 p.m., Teatro7 Lab (Via Genova Thaon di Revel 7, Milan) hosts a unique event dedicated to the discovery of monovarietal extra virgin olive oils, the protagonists of an evening that combines gastronomic excellence with the culture of Italian oil.

The initiative was born from the desire to UNAPOL – National Union of Olive Producers Associations – to enhance the territorial excellence of each extra virgin olive oil, through the signature cuisine and creativity of chef Umberto Vezzoli, ambassador UNAPOLThe chef will sign an exclusive tasting menu, designed to enhance the organoleptic characteristics of three fine monovarietal oils: Coratin, Ravece and Biancolilla.
Alfredo Marasciulo, panel leader of the Tasting Committee of the Aldo Moro University of Bari, one of the most authoritative figures in the Italian oil panorama, will guide guests on a journey of in-depth sensory and technical knowledge.
The menu will open with a beef praline with turmeric mayonnaise, followed by the iconic dish “Milan Tokyo 1988” – a risotto alla milanese with tuna tartare – and will end with a lukewarm seafood dish with clams, mussels and shrimp on a cream of broccoli. Each course will be paired with a single-variety oil, demonstrating how Italian EVO can enhance contemporary cuisine, while also contributing to well-being.
The event reflects UNAPOL's mission: to promote the quality and diversity of Italian monovarietal extra virgin olive oils, supporting a virtuous supply chain that combines tradition, innovation and sustainability.
