High quality with large systems: an all-Italian record

Cutrera, Romano, Franci, Riva del Garda and Accademia Olearia reveal the secrets of their multiple awards

At the conclusion of the many (perhaps too many) oil competitions, an extremely significant fact emerges: it can be done with high, indeed very high quality, even with large plants, those that are normally associated with quantity.
There are numerous examples that we could cite, let's summarize five of as many companies that make use of systems Pieralisidistributed evenly from north to south of Italy, including the islands, confirming that the variety or geographical location does not affect the final result.
Starting from Frantoi Cutrera of Chiaramonte Guelfi, in south-eastern Sicily, “the largest company among the small and the smallest among the large” as Salvatore Cutrera (in the picture), at the helm together with his brothers, likes to define it, with over a million bottles a year. She explains. "We have a Leopard 8 and a Leopard 10. They are an integral part of an organization that goes from the fields to the bottling. Systems that we have customized to enhance their performance, starting from the exhausts, with daily cleaning and a processing system that allows us to guarantee the cooling of the machine precisely according to the greater volumes processed at low temperatures, so as to best enhance the olfactory components and sensorial of the extra virgin olive oil we obtain”.
Going up the peninsula, we stop in the province of Benevento, at the Roman mill, over 400 awards won over time. "I passed from a Jumbo 2 Special to a Spi 46.2D of 40 quintals per hour – he confides Albert Roman (in the picture)  – and I didn't think that by increasing the processing capacity I could also increase the result, but the data is objective. The merit? Olives harvested at the right time, but also the professionalism of the miller who manages to make his machines express themselves at their best. Then the decanter is crucial, with the screw and diameter as strengths. And thanks to this plant, important awards are also won by my customers, who also come to mill from outside the province".
Going up Italy, here we are in the province of Grosseto, at Frantoio Franci, another pearl of olive-growing Italy. “The success of a product – he explains George Franci (in the picture) – cannot be traced back to a single factor. I always put the person and the organization in charge of the oil mill at the centre, combined with sensitivity in the objectives to be achieved. I have a Dmf from 30 quintals per hour, which helps to guarantee the best product, obviously starting from a raw material that is up to par. The important thing is always to pay particular attention to the adjustment of the machines”.
Going even further north, here we are at'Agraria Riva del Garda, in the homonymous town in the province of Trento where he makes a fine show of himself Leopard 6 from 20 quintals per hour. “We are a cooperative with 80 producer members and a thousand olive growers and we also work on behalf of third parties – explains the director Furio Battelini – and therefore for us the strict ledger is an indispensable requirement. The Pieralisi system is able to guarantee this, working regularly, without sudden changes in temperature and without overheating the pasta. We have very small batches, from 3 to 5 quintals, so we always keep the machine well loaded, regulating the entry of the olives, with modifications that allow us to clean up with rinsing and cool the drum to always guarantee high quality”.
Finally stop in Sardinia, at the Accademia Olearia of Alghero where Alexander Fois (in the picture) he explains: “Having said that quality comes from the field, it should be added that, whether the extraction plant is large or small, it is certainly still a machine that you need to know how to drive. For ours, a Leopard 6 from 30 quintals per hour, for example, many factors come into play, and cleaning is also essential after each process. They also have the Protoreactor, also this beautiful machine but which, like the Leopard, you must know how to use well to receive full satisfaction. In short, the machine is important, but also the professionalism and competence of those who use it".
