More than an oil mill, it is a real one international hub dedicated to extra virgin olive oil. An investment of 13 million euroOver 20 thousand square meters of internal and external spaces and as many dedicated to “green islands” (Parco Ulivi and Parco Clessidra). Crusher, storage and packaging line are all equipped with 4.0 systems, accompanied by a analysis laboratory, baglio-museum, A 'didactic area and a evo oil school.
welcome to Chiaramonte Gulfi, in the province of Ragusa. welcome to Cutrera mills. Welcome to a family that has been cultivating olive trees and producing oil for six generations, with dedication and passion, respecting the native varieties of southern Sicily.
It is rightfully among the oil companies, a point of reference for national olive growing, an authentic flagship that processes 60 quintals of olives every year, that produces from 7 to 8 thousand quintals of oil, For a total of a million bottles of various formats and brands. More than half cross national borders, with Germany, England, USA and Canada as main channels. They also make a fine show of themselves Eataly and its founder, Oscar Farinetti, had the honor and the burden of activating the button that set the new ultra-technological plant, where innovation Pieralisi expresses itself at its best.
“High technology at the service of quality” he remarks Salvatore Cutrera (in the picture), who wanted beside him not only suppliers, buyers, institutions and friends. But also his colleagues: "Because we are all on the same side - he remarks - not competitors, but colleagues at the service of olive growing. Because of this ours is and will always be an open mill so that anyone who wants to increase their knowledge in the transformation of olives into oil can collect as much information as possible and increase their skills".
Thanks to the collaboration with Pieralisi, world leader in the production of oil machines, all machines are interconnected e a series of sensors meticulously monitors each stage of production to intervene promptly when any critical issues arise. In particular, a infrared optical sorter allows you to discard damaged olives or those not considered compliant according to your quality criteria, guaranteeing a qualitative improvement at the base.
The new 4.0 system allows you to manage the production cycle based on the variety, the harvest period and the ambient temperature. Furthermore, an innovative system has been created which allows each single process of the plant to be set on the basis of a personalized "recipe" by cultivar, origin and state of ripeness in order to enhance the organoleptic properties of each variety of olive.
All the process is then thermoconditioned, in the sense that it is possible to act on the temperatures of each single phase, from washing the olives to bottling and this allows, in addition to enhancing the aromatic notes, to maintain all the chemical and organoleptic parameters in an optimal way for a long time.
In short, a jewel of technology: "Our work, our history, our heart is in here" confides Salvatore Cutrera to whom Farinetti congratulates and sincerely thanks "for having been able to tell this territory well and because it has been able to make strong choices, in a difficult time for everyone”.
