Renzo Ceccacci, head emeritus of anesthesia, resuscitation and analgesia, president of for 6 years Olea (Experts and Tasters Laboratory Organization) uses the metaphor of the fence to warn against the excessive and continuous use of seed oil, instead of the healthier extra virgin olive oil. In fact, referring to an old advertisement, he states: “With seed oil, you don't jump over the fence, you fall on it. But unfortunately, that 10-second televised message reached tens of millions of Italians directly. We can spend hours in conferences with 100 or 200 people explaining the reality of the facts. It will always be an unequal fight".
The reality of the facts, remember Ceccacci (in the picture), is the excessive presence of polyunsaturated fatty acids in seed oils: in that of but is average more than 40%, therefore with a much higher percentage than, for example, al 13% present in breast milk which is more or less the same as that found in the extra virgin olive oil quality.
"The polyunsaturated fatty acids – he explains – we call them essential because we can't produce them with our body. These enter the composition of lipoproteins capable of protecting our arteries, but above all they enter the composition of membranes of our cells. For this we must assume them in the ratio of about 13% of the fats we ingest on a daily basis. Percentages of higher intake may on the other hand result harmful, because we are unable to properly metabolize polyunsaturated fatty acids. Those not used for the two functions described, our body turns them into peroxides which are the substances that induceaging of our cells and unfortunately they also perform an activity of possible facilitation of the onset of cancer diseases.
Vice versa, extra virgin olive oil, thanks to the correct proportion of saturated, monounsaturated and polyunsaturated fats, the latter in ratio between omega 3 and omega 6 of 1 to 10 they have practically the same percentage composition of the fats contained in mother's milk, making them the absolutely perfect vegetable fat for human nutrition”.
