"Enhance more and more the figure of the oil master, expanding the audience of members of the professional register, to restore centrality to this artisan professionalism and enhance quality productions".

Elijah Pellegrino, President of AIFO – Italian Association of Oil Millers (in the picture) – is strongly convinced of this. "The miller - he underlines - although he is at the center of the supply chain, has found himself oppressed for a long time on the one hand by the large numbers of production, expression of a pool of votes coveted by the "system" and on the other by the industry lobbies and the trade has always been an expression of economic power.

The emergence of the central part of the supply chain - points out the president of Aifo - immediately entails the opportunity for the right recognition of the miller as a producer of quality extra virgin olive oil, a prerogative currently granted only to the olive producer. Then, the introduction of the law and the operation of the oil mill master of 2014 of the Puglia Region, reopened within the deadlines for enrollment in theNational Professional Register, will make it possible to expand the audience compared to the 80 millers registered to date, thanks to the enabling training courses which, obviously, can be organized throughout Italy.

Through the oil master – concludes Pellegrino – we will go to raise the quality level of the productions, emerging from the globalization of industrial oils with a certified sustainability project that guarantees craftsmanship and wholesomeness of the production, with higher standards than those present on the market”.
